We lived in a farmhouse in Chaumont, France for a few years and our artist friend made this once, and I’ve been making it ever since. Cuisses de Poulet a la Crème is a pretty fancy name for a quick and easy one-pan chicken stew that even the kids will love!
Cuisses De Poulet A La Creme
Take 6 boneless chicken thighs(they have the most flavor, right?), salt and pepper both sides (feel free to say Bam!) and toss them into an already-hot pan containing ½ olive oil and ½ canola oil. I’d tell you how many tea/table spoons, but in my all my years of cooking, (I’m not a baker), I don’t think I’ve ever measured.
The key during this part is to get a nice crust on each side. The thighs aren’t cooked all the way here, just nicely browned.
Remove thighs from the pan and put in a chopped onion for a minute or 2 then add your mushrooms. Portabellas work great if you don’t have chanterelles. Toss these around for a minute or 3, throw in a a few crushed garlic cloves, lots of fresh thyme and deglaze the whole thing with a splash of whichever white wine you’ve already been sipping. Add a whole glass. Cook down for 2 minutes, add back your chicken for 2 minutes and then get all French on it; add a ¼ cup crème fraiche or if you can’t find it, 3-4 ounces of half and half. 5 more minutes on gentle simmer so it all comes together.
Serve the chicken, mushrooms, and sauce over that fresh linguine you buy at the store. You can separate out the mushrooms and save them for yourself if the kiddies don’t approve of them on their dish.
